In Mexican street food lingo, “torta loca” means bigger, messier, and layers upon layers of ingredients and flavors. It’s a sandwich you come hungry for, like this Adobo Pork Torta Loca that I first had in Coahuila and couldn’t stop craving, so I re-created it to share with you. To get one more deliciously messy layer in, I top it with sunny side up @egglandsbest eggs. They’re a staple in my fridge because they contain six times more Vitamin D, 10 times more Vitamin E, and more than double the Omega-3s and Vitamin B12 compared to ordinary eggs.
