French Bistro Chicken with Mushroom Cream Sauce, Crispy Roast Chips & Green Beans A little French bistro moment at home, with @cobramestate Classic Extra Virgin Olive Oil used to get those chips golden and crispy, sear the chicken and bring the mushroom sauce together. AD Serves 2 400g Sebago potatoes 3 tbsp Cobram Estate Classic Extra Virgin Olive Oil, divided ½ tsp garlic powder ½ tsp dried thyme 2 skin-on chicken breasts 125g Swiss brown mushrooms, sliced 1 shallot, finely diced 1 garlic clove, minced 50ml dry white wine 75ml chicken stock 100ml thickened cream ½ tsp Dijon mustard ½ tsp lemon juice 150g green beans, trimmed 1 tbsp finely chopped parsley Salt & black pepper Preheat oven to 220°C fan-forced. Peel potatoes and cut into thick chips. Soak in ice-cold water for 30 mins, then drain and pat very dry. Toss with 1½ tbsp olive oil, garlic powder, thyme and salt. Spread over a lined tray and roast for 35–45 mins, turning halfway, until golden and crispy. Pat chicken dry, season with salt and pepper and rub with ½ tbsp olive oil. Place skin-side down in an oven-safe pan over medium heat and cook for 7–9 mins until golden and crispy. Flip and cook for 2 mins, then transfer to the oven for 8–12 mins or until cooked through. Remove and rest. Pour off excess chicken fat, leaving the fond in the pan. Add remaining 1 tbsp olive oil and mushrooms and cook for 5 mins until golden. Add shallot and garlic and cook for 2 mins. Pour in wine, scraping up the fond, and reduce by half. Add stock and simmer for 3 mins. Stir through cream and Dijon and simmer until creamy and slightly thickened. Season with lemon juice, salt and pepper, then stir through parsley. Meanwhile, steam the green beans for 4–5 mins until tender but still vibrant. Slice the chicken and serve with the mushroom cream sauce, crispy roast chips and steamed green beans. Finish with parsley and black pepper.

@mainlandau Vintage Aged Cheddar is always the main event for me. It’s rich, crumbly and SO good with all the salty, tangy and sweet bits on the plate. With Mainland’s focus on time, craft and quality, you know it’s going to be the key piece of any elevated snack plate worth savouring. #ad
