Mayfield Dairy — Reel
Read caption
Cake for breakfast? Yes! And packed with protein? Also yes! #ad Kick off baking season with this easy, cozy Apple Butter Cinnamon Roll Breakfast Cake. It’s made with an entire 24 oz. container of @mayfielddairy cottage cheese, which makes the cake tender beyond words, and adds an extra protein boost with 8g of protein per serving. That’s more than double your average cake slice! It’s swirled with cinnamon and apple butter, and then finished with a creamy cottage cheese-maple glaze. There’s no better way to start your day! There’s even more to love because Mayfield cottage cheese is made with fresh dairy from Southern family farms so you’re getting that freshness and quality in every bite. Save this recipe and grab some Mayfield cottage cheese from @krogerco to try it yourself! #cottagecheeserecipes #cottagecheese #highprotein mayfielddairy Apple Butter Cinnamon Roll Breakfast Cake Yields 12 servings 1 (13.25-ounce) package spice cake mix 24 oz. container Mayfield cottage cheese, blended until smooth 1/4 cup vegetable oil 3 large eggs, at room temperature 1 teaspoon cinnamon 2/3 cup apple butter 2 tablespoons pure maple syrup 1 cup powdered sugar, plus more as needed 1/4 cup chopped pecans, optional Preheat oven to 325°F. Coat a 13 x 9-inch baking dish with cooking spray. Place cake mix, 2 cups of the blended cottage cheese, oil, and eggs in a large mixing bowl. Beat with an electric mixer on medium speed until smooth and well combined, about 2 minutes. The batter will be thick. Spoon batter into the prepared baking dish and spread into an even layer. Sprinkle the cinnamon over the cake evenly. Spoon dollops of the apple butter on top. Use a spoon to gently swirl the apple butter into the batter. Bake until golden brown and just set, 30 to 40 minutes. A toothpick inserted into the cake portion should come out clean or with a few moist crumbs attached. Let cool slightly before glazing, about 10 minutes. Combine the powdered sugar, remaining blended cottage cheese, and maple syrup in a medium bowl. Whisk together until completely smooth. Pour the glaze over the warm cake. Sprinkle with pecans, if desired.
